Method

   Whisk yolks and sugar over a bain-marie until pale and thick. Off the heat, fold in the mascarpone.

2. 02

   Whip the cream to soft peaks and fold in. Dip each savoiardo briefly in the espresso and marsala; layer with the cream. Chill overnight. Dust with cocoa before serving.
